tecnalia will create a new structure of active protection for processed cake, cheeses and pastry products with the help of natural antifungal complexes and the study of their consequent application into these food items. the addition of antifungal compounds through three diverse methods will be investigated in this project by applying an edible coating on the food and by adding them in the plastic packaging material by coating on this packaging material or direct inclusion in the polymeric matrix. both, the edible coatings and the active packaging applied on the surface of product, offer the controlled exodus of some beneficial additives to take place over the period of time. in addition to this, depending on the used material for their production, it is possible to control transmit of gases as oxygen, to the product, and allow monitoring the humidity. all these factors may contribute to enhance the preservation of the selected products by minimizing the fungal growth. the quality and shelf life of these products would thus be extended and high added value and new ways of business with high technological content would be created, and innovation in the plastics and food sector would be encouraged. the national centre for food technology and safety cnta and the spanish institute of plastics technology aimplas, joined to the companies industrias l&aacutecteas asturianas s.a., novapan s.l., and general de manipulados pl&aacutesticos s.a. are contributing in this project alongside tecnalia. source of information httpwww.tecnalia.comenhealthnewstecnaliawilldevelopactivepackagingforcheese…
